No Bake 3 Ingredient Cinnamon Almond Butter Cookies
Straight protein, please! This quick recipe is not only easy to whip up but it satisfies your sweet tooth too AND almond butter makes you feel full. Cookies for breakfast, no guilt, no problem :) We like the Cinnamon Roasted Almond Butter for a festive spin on a traditional cookie, enjoy!
Line a baking sheet with parchment paper. Set aside, but also be sure to make some space in the freezer for this batch.
In a medium bowl mix all the ingredients together using a spatula or whisk. Add the Americano Cinnamon Roasted Almond Butter, maple syrup, and coconut flour. Keep folding together until all ingredients have created a thick mixture. Cover bowl and freeze for 15-20 minutes.
Remove from freezer and drop cookie scoops (using a tablespoon or cookie scooper) onto the prepared baking sheet, spaced evenly apart. Using a fork, flatten cookies to desired thickness. Of course, add those criss-crossed patterns with your fork if you desire!
Transfer baking sheet to chill for 25 minutes, until somewhat firm. Store in an airtight container at room temperature or in the refrigerator for 1-2 weeks. Enjoy!
