Sweet Potato Mash
A healthier twist on a traditional holiday side dish. The Cinnamon Roasted Almond Butter adds a creaminess just like regular butter, while providing a nice nutty flavor to the dish.
2 pounds of sweet potatoes, peeled and cut into 1-inch cubes
1/3 cup Americano Cinnamon Roasted Almond Butter
1/4 cup brown sugar
1 tsp ground cinnamon
1 tsp salt
Place sweet potatoes in a medium pan, and cover with cold water. Bring to a boil over high heat.
When the water boils, reduce the heat to medium. Cook for 15-20 minutes or until sweet potatoes can be pierced easily with a fork.
Once the potatoes are tender, drain the potatoes over a colander or strainer.
Place the drained potatoes back into the pot, add the remaining ingredients, and mash to combine.
Adjust the mash according to your taste, and serve.
Be careful not to mash the potatoes too much, or it may result in a gooey texture.
